Meatless Monday: Salad Wrap

When we do Meatless Monday, we are so focused on our dinner being meatless, that I actually forget about keep meat out of lunch sometimes.  To keep us on track a bit, we are going to start working on some easy lunch and snack options.  Today’s efforts?  Salad Wraps!

We all love wraps!  No recipes here.  Just take a tortilla, pile some salad, cheese, hard-boiled eggs, etc. in the middle, top with some dressing, and wrap it all up!  I love that it can be a little different everyday.  Maybe I’d like to have hard boiled eggs one day or add a little bite with a Buffalo Ranch dressing.  Serve with a side of chips or a pickle and you’ve got a healthy, meatless lunch.  Enjoy!

    This is one of the reasons I love wraps, there is no recipe! You can’t go wrong with wraps. you just fill them with what ever veggies you like and then spread some dressing and you are set.

    yum! I love wraps but mine usually have meat in them, like leftover chicken or pork chops, yum! I like your meatless one though it sounds delicious! If I were making a meatless one, I’d probably put leftover lentils and cucumbers in it with some balsamic vinaigrette.

    These were a big hit at our house – and even my Honey/Hubby love them! As other have noted,one can put just about anything inside the wraps (Last night I tried making them along the lines of an Asian Vegetable Spring Rolls – I used some miso dressed vermicelli, and used scrambled eggs for protein.

    Las night I made a cold peanut / seasame noodle salad which waa a real hit!. Since it’s Meatless Monday again, I’m thinking of putting the leftovers into a wrap with some shredded carrots, and thin-sliced cucumbers and scallions for added crunch.

    Thanks.- a wrap is a wonderful vehicle to disguise healthy foods like vegetables!
