International Delight Iced Coffee Summer Sweepstakes: Triple C Float!

The “Triple C” stands for coffee, chocolate, and cola (I used Coca-Cola, my caramel flavored drink of choice)!

When I first saw Mocha Iced Coffee, I immediately thought about making ice cream.  I substituted the iced coffee for the milk in your typical ice cream recipe.  I also did not really need to add any flavorings; International Delight did all of the that work for me!  That recipe is below.

After making the ice cream, I quickly decided that topping it with cola would be a great way to make a yummy, decadent treat.  And so the Triple C Float was born.  Make sure you keep in mind that the fourth C (caffeine) is in all three, so this treat should add a nice energy boost as well.

International Delight Mocha Iced Coffee Ice Cream

Ingredients

2 cups heavy cream
2 cups International Delight Mocha Iced Coffee
6 egg yolks

Directions

Combine cream and Iced Coffee in a saucepan and bring to a boil over medium-high heat.  Remove from heat.

Beat egg yolks in a medium bowl.  Whisk 1 cup of cream mixture into the yolks.  Gradually add the yolk mixture back into the hot cream.  Cook over medium-low heat, stirring occasionally, until the mixture reaches 170 degrees and coats the back of a spoon.  Remove from heat and strain into a clean container.  Cover with plastic wrap to keep skin from forming and chill at least 2 hours.

Freeze in an ice cream machine according to manufacturer’s directions.  Pour finished product into an airtight container and store in freezer.
