Valentine’s Peanut Butter and Jelly Heart Cookies

I am excited to share a Sophie inspired recipe here. We were waiting for bath fizzies to dry. Sophie had my attention as Grace and Matthew were off playing. She begged for cookies. hmmm. I didn’t want to dig a lot out so I decided to go easy and make the three ingredient peanut butter cookies but baked them in heart pans we had out. As always in the heart pans, the middle caved in and begged for something to fill it. I was thinking chocolate … I admit I am always thinking chocolate! Brian suggested jelly … and a million other things too! The jelly idea had me as peanut butter and grape jelly sandwiches were my favorite as a kid. Being hearts they needed red … strawberry jelly though. So here are Sophie’s special heart cookies …

Peanut Butter and Jelly Heart Cookies

Peanut Butter & Jelly Heart Cookies

Ingredients

1 c peanut butter
1 c sugar
1 egg
Strawberry jelly

Directions

  1. Preheat oven to 350 degrees.
  2. Combine the peanut butter, sugar, and egg in a mixing bowl. Put small spoonfuls in your heart-shaped mold and bake for 10 minutes.
  3. Let cool. Flip the molds over and tap the bottom of the mold to release the cookie.
  4. Spoon the jelly into the hearts.
  5. Enjoy!!
