We started out by picking up M&Ms at Walmart during a quick trip to grab a few more items for lunches. The best part of this recipe is that you can use any kind of M&Ms! We went with the original M&Ms since this was a treat for the kids and that is their favorite kind of M&Ms. If it was up to me, I would have grabbed the peanut butter M&Ms … then again they wouldn’t have latest until I made the recipe! I seriously love those peanut butter M&Ms!
I started with the cheat cookie dough … you know the cookie dough in the refrigerated section. I used chocolate chip because once again this is the kids’ favorite cookie. Use your favorite kind of cookie or be extra ambitious and make your favorite cookie dough from scratch and bake up some uniform-sized cookies.
TIP: A cookie scoop (like a little ice cream scoop or one sold as a cookie scoop) like what you see in this picture is perfect for making cookies that are all just about the same the size!
Let your cookies cool and then get a scoop of ice cream between two cookies. Once you have the Cookie Ice Cream Sandwich, add M&Ms to the sides to make it a Super Hero Cookie Ice Cream Sandwich. You can use the colors of your favorite super hero or even go with rainbow colors! We started with the red and blue M&Ms to make a Captain American themed Super Hero Cookie Ice Cream Sandwich. Sophie’s first Cookie Ice Cream Sandwich didn’t sit flat so she declared that it was a Monster Ice Cream Sandwich. We stuffed M&Ms into the open “mouth” of the monster! Remember that these Super Hero Cookie Ice Cream Sandwiches are perfect however you make them.
The best part of this recipe is when you let your little super heroes enjoy the Super Hero Cookie Ice Cream Sandwiches. Sure our kids were already in their pajamas but they were so excited to have a dessert treat that night. You can use their dessert time to continue dinner conversations or even just let them know how they are your little superheroes!
Maybe you have seen all of my Instagram and Facebook shares about lunch packing. While the kids would love a Super Hero Cookie Ice Cream Sandwich in their lunch, that is not going to work. I had cookie dough left in my tub so I decided to make some cookies that could be sent in school lunches. I added some M&M fun to these cookies to pack in lunches. The kids were excited to pick their favorite color M&M to put in their lunch. Grace picked blue, Matthew picked red, and Sophie picked green!
Super Hero Cookie Ice Cream Sandwiches
- Refrigerated Cookie Dough (We used chocolate chip cookie dough.)
- Your Favorite Ice Cream (We used vanilla ice cream.)
- Bag of M&Ms (We used original M&Ms.)
Bake the cookies and let them cool. Let ice cream soften a little. Place one scoop of ice cream between two cookies. Decorate the sides with M&Ms. Smooth your cookies a bit lop-sided to make it a Moster or even for a Super Hero Cookie Ice Cream Sandwich!
