Meatless Monday: Slow Cooker Lentils

Beth and I are gearing up for our vegan diet challenge as we approach the new year.  We like this recipe because it has so many options.  If you want to go meatless but someone in your family just can’t bring themselves to drop meat, just serve it as a side to roasted chicken or mix the chicken right in.  It’s a very forgiving dish.

 

Slow Cooker Lentils

These lentils are easy to make and great as a base for other dishes.  Add rice, tomatoes, caramelized onions, or kale for a great complete protein.  These soak up a lot of liquid, so you could even add a bit more broth or water to have a satisfying soup.  YUM!

Ingredients

1 C carrots, chopped (about 3 medium carrots)
1 C celery, chopped (about 3 ribs)
1 C onion, chopped (about 1 medium onion)
2 cloves garlic
8 C vegetable broth
1-16 oz bag lentils, rinsed and sorted
1 tsp. salt
1 tsp. black pepper
1 tsp. Italian seasoning

Directions

Combine all ingredients in slow cooker.  Cook on high for 4 hours or low for 8 hours.

    I have never cooked lentils, but I bought a pack a LONG time ago. They are still sitting in my pantry, so I’ll have to give this a shot. Thanks for the recipe!
