Easter with Great Value, Part 2

Wondering what to do with your leftover Easter ham?  Our kids will tell you that one great way to use it up is to make some yummy Ham and Cheese Pockets using Great Value brand crescent rolls from Walmart.  Check out how much they loved them when we whipped up a batch for them!

If you have kids, maybe you are wondering what to do to keep them busy while you are getting Easter dinner all ready.  We like to put ours to work!  The work has to be a little fun for them, though.  While I’m getting dinner together, Beth can take the kids aside and let them help make dessert!  She made a great big Easter Bunny cookie cake that needed decorating.  See how much fun they had making a mouth, ears, bowtie, and whiskers?  How much fun would your kids have doing this?  Look out for Matthew…he’s getting caught trying to sneak a piece.  After dinner, Bubba, after dinner.

As much fun as they had decorating, that cannot compare to the sheer joy of eating cookie covered in frosting and candy!  That poor bunny just never had a chance!  Thankfully, we did this on bath night, because all three of them just had frosting everywhere!

Turkey Leftovers: Pot Pie and Enchilasagna

Some people do ham for Christmas, but I’ve always fancied turkey.  Just like with Thanksgiving, though, you always have the problem of what to do with all of the leftover turkey.  You want to use up the turkey, but turkey dinners, turkey sandwiches, and turkey salad can only get you so far.  Here are my simple offerings for cheap, easy ways to completely transform that turkey into a new dish that the entire family will enjoy.  Both of these recipes use 5 ingredients (not counting salt, pepper, and water).  Odds are that you have everything you need to toss together one of these dishes tonight!

 

Turkey Pot Pie

This really couldn’t be simpler.  I used 2 packages of powdered gravy mix and a bag of frozen soup mix (potatoes, carrots, peas, etc).  I prefer the brown gravy, but leftover turkey or chicken gravy works, too.  If you don’t have a pie crust, use a can of biscuits or a batch of baking mix to cover the gravy mix.  The best part has got to be the crust soaking up all of that gravy.  So cheap, but soooo tasty!

Ingredients

2 cups brown gravy, prepared
1-16 oz bag mixed frozen vegetables
2 cups chopped leftover turkey
salt and pepper to taste
1 pre-made refrigerated pie crust
1 egg
1 Tbsp water

Directions

Preheat oven to 350.

Mix first 4 ingredients in a medium pot over medium heat and warm through for 5-10 minutes.  Pour into a greased, 9-inch, deep dish pie plate.  Cover the dish with the crust and fold the edges in.  Beat the egg with the water and brush over the crust

Bake at 350 for 35 minutes.  Allow to cool for 5-10 minutes before serving.

 

Turkey Enchilasagna

I wanted to make enchiladas, but it had been a long day and rolling everything up seemed like so much work.  We also didn’t have any enchilada sauce, but we always have tomato sauce and spices so I whipped some up using this easy Ten Minute Enchilada Sauce Recipe.  Layering a flat starch product with tomato sauce, meat, and cheese seemed too much like lasagna not to go with the corny little play on words.  Serving it up was actually much easier than enchiladas that I’ve made in the past, so this might start becoming a regular thing around here.

Ingredients

2 cups of Mexican Blend Shredded Cheese
1 6-oz can black olives, chopped
1 can enchilada sauce
8 tortillas
2 cups chopped turkey

Directions

Preheat oven to 350.

Combine cheese and olives in a large bowl.

Spoon 2-3 tablespoons of sauce into the bottom of a round casserole.  Layer tortilla, 2-3 tablespoons of sauce, 3-4 tablespoons of turkey, and 3-4 tablespoons of cheese mixture.  Repeat 6 more times.  Top with tortilla, more sauce, and the remaining cheese.

Bake at 350 for 30 minutes.  Let cool for 5-10 minutes before slicing and serving with sour cream.

October 2011 Monthly Meal Plan

Last year, we did weekly meal plans. Well we did weekly meal plans most of the time. I say most of the time because some weeks we forgot to plan. Life got busy, school work was out of control, the preschool business started, the family all got sick. You name it, life happens. When I suggested a Monthly Meal Plan late last month, I was sure my husband would declare me nuts for good. BUT … he was on board.  Part of my accountable in doing this is posting our Monthly Meal Plan each month.

Last month, we tried to use up items we have in the fridge/pantry! It worked fairly well and we did good staying on track AND using our fresh produce. This month we decided to switch up again and go back to a plan we have used in the past … we are going to see how much cooking for the week we can do Sundays but creating a big dish (such as ham) that can be used all week! This is a big time saver and has worked well for us in the past.

A few notes …

  • I am out of town for almost a week (chicken week) so dinners are extra easy that week.
  • The girls switched classes so we don’t have a Thursday 4:45pm class. This is helping our meal plan but killing me since Grace’s class is now at 6:30pm and we don’t get home until 8pm. (Their normal bedtime is between 7 and 7:30pm!) This will only last through December so I am trying to make it. My next kink is Girl Scout meets at 5:45pm so we are trying to plan easy to cook/clean up dinners those nights!

A few notes …

  • We have a weekend away (in Philly!) this month so that weekend we planned some meals we may leave but one night did mark “out”.
  • We left leftovers on Thursday as a trial. The girls are starting at class that starts at 4:45 pm that is 30 minutes from the house. Oh and Grace gets off the bus at 4pm. Did I mention I am not home yet by then? Brian is going to a Bible Study those nights too. Thursdays will be crazy so we are going to see what we can manage dinner-wise. Our goal is to NOT eat out every Thursday.

Wednsday = Wordly Wednesday; travel the world while sitting at your dining room table!
Thursday = Leftovers; we all have them so you should use them and not waste them!
Friday = Cooking with Dad; this series will provide dads (or anyone like this mom here) with simple recipes to take over the kitchen for a night!!
