4 Ingredients Gluten-Free Cookbook

We recently received a copy of the 4 Ingredient Gluten-Free Cookbook and are excited to share a couple of the recipes with you!

Seeing that I had the review task for this cookbook, I went to the dessert section. The first recipe I tried out was the Peanut Butter Cookie recipe.

Peanut Butter Cookies

1 cup crunchy peanut butter

1 cup packed brown sugar

1 teaspoon ground cinnamon

1 egg

Preheat the over to 350 degrees F. Line 2 baking sheets with parchment paper. In a bowl, mix all ingredients. Using a tablespoon amounts, roll into small balls and place on the baking sheets. Flatten slightly with a fork, crisscross style. Bake for 10 minutes, or until a thin crust forms on the cookie. NOTE: These will harden as they cool.

My Thoughts: I love peanut butter cookies. These peanut butter cookies were really simple to make with what I had on hand. I admit I didn’t use crunchy peanut butter but went for the Skippy Natural Peanut Butter I seriously love. These are worth making again for sure!

Next up on the test list is the Flourless Chocolate Cake recipe!

Flourless Chocolate Cake

4 eggs, separated

1 cup superfine sugar

1 3/4 sticks (7 ounces) butter

8 ounces dark chocolate

Put a rack in the lowest position and preheat the oven to 350 degrees F. Line a 9-inch round cake pan with parchment paper. With an electric mixer, beat the egg yolks with 1/2 cup of the sugar. In a separate bowl, beat the egg whites until fluffy, then add the remaining 1/2 cup sugar. In a separate bowl, beat the egg whites until fluffy, then add the remaining 1/2 cup sugar, gradually beating until stiff peaks form. In a bowl set over a pan of hot water, melt the butter and chocolate, stirring regularly. Fold the chocolate mixture into the egg yolks. Fold in the egg whites. Scrape the batter into the cake pan and bake for 40 minutes. Serve warm or chilled.

I can’t wait to try this recipe since I have some baking time back in my life for a few weeks!

Our Thoughts …

We decided the Lemon Glazed Gingerbread Bundt cake would be great for the after service social tomorrow. I made the cake and left Brian to make the glaze of which he decided to do the Orange Glaze variation but then not follow the directions at all. It is a glaze but not the one in the recipe. He is worse at following recipes than me for sure! We put it in the Christmas Tree Bundt Pan because we have to use the heck out of that pan at this time of the year for the space it takes up year round!;) Here is our end product …

The cake is amazing in flavor. The recipe really is one a one bowl recipe which I LOVE since I hate baking clean up. I also just noticed a vegan and gluten free homemade cake mix recipe in the front of this cookbook. It is always great to have recipes like that on hand for friends and I think I will post a picture of the end product of the vegan recipe in January so watch for it!

Our Thoughts …

I have one of the 1970s versions of the Betty Crocker cookbook. It was on my grandma’s shelf before it was on mine. It is still one of my first references when I am cooking and baking. I was excited to see a new edition of this cookbook come out. It was hard to image it getting better that my go-to reference 1970s version but it did get better. There are so many new recipes in this book. I love the chapter layout with tabs of this book because it makes it so easy to find that dessert or appetizer you want to make. The tabs are in the old version and probably one of the reasons I love that book so much. I am thrilled they kept the tabs in the book to make it such an easy reference. They also kept the pictures. I love having a picture when I am making a recipe because then I can see if I flubbed it up or if I was almost close to making it. (I rarely claim perfection!) Over all this new edition is a much a have for a kitchen … even if you have an older version of the cookbook like I do. You will find something to love in this edition for sure!

This would make a perfect gift for someone who wants to start to cook in the new year, has an older edition of this book, or even just needs a great reference cookbook!

I was really excited to participate in the gift exchange on the blogging community forum. My exchange partner was Karen over at 3 Garnets & 2 Sapphires. Our Thoughts …

This more than a cookbook. It contains many stories from Mireille’s life too! The cookbook is simply organized into a breakfast, lunch and dinner topics followed by a chapter on fish and vegetables and then sweets. The recipes are laid out really nice in a big enough font to read while you are cooking and baking! For breakfast you might pick the Peanut Butter Banana Oatmeal or maybe the Provencal Omelet! Or maybe you want to skip right to the sweets and try the Fruit Salad with Quinoa!

This cookbook is on a great sale over at Amazon right now! Maybe some of these recipes will help you slim down this holiday season!

There are more than 750 recipes to choose from because we’ve tried to make sure home cooks have a selection to suit every possible occasion — from a dress-down backyard barbecue to the most elegant sit-down dinner. We’ve also considered the need to satisfy a variety of dietary preferences, from strictest vegans to wide-ranging omnivores. And since we know busy families are probably doing lots of things at once, many recipes can be prepared ahead of time or, if so inclined, made in a slow cooker while busy doing something else.

The book is structured to cover a broad range of options. This book is full of ideas. If you are planning a Thanksgiving event, Christmas dinner, or just a holiday party, this book would be a great place to start. Maybe the Zucchini Hummus or Chive and Navy Bean Dip would be great to add to your next event. I think the Honey Mustard Dip might show up on our menu soon for a weekend football watching meal!;)

We love to try difference cookbooks. We aren’t Gluten-Free at our house but we have read about this diet change that many people are living with right now. We also have several friends who are now on gluten-free diets so if we cook for them, we know that this cookbook will be our first resource. Cinnamon-Raisin Muffins with Streusel Topping

Streusel:
1⁄4 cup chopped walnuts
1⁄4 cup packed light brown sugar
2 tablespoons brown rice flour (such as Bob’s Red Mill)
1⁄2 teaspoon ground cinnamon
11⁄2 tablespoons canola oil or butter

Muffins:
Cooking spray
3.3 ounces brown rice flour (about
3⁄4 cup; such as Bob’s Red Mill)
4.1 ounces potato starch (about 3⁄4 cup)
2.1 ounces tapioca flour (about 1⁄2 cup)
3⁄4 cup granulated sugar
1 tablespoon baking powder
11⁄2 teaspoons xanthan gum
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon salt
3⁄4 cup raisins
1⁄4 cup chopped toasted walnuts
1⁄3 cup canola oil
1 teaspoon vanilla extract
2 large eggs
1 cup plain soy milk

1. Preheat oven to 400°.
2. To prepare streusel, combine first 5 ingredients in a small bowl with a fork until mixture resembles small peas.
3. To prepare muffins, place 18 paper muffin cup liners in muffin cups. Coat liners with cooking spray; set aside.
4. Weigh or lightly spoon brown rice flour, potato starch, and tapioca flour into dry measuring cups; level with a knife. Combine brown rice flour, potato starch, tapioca flour, granulated sugar, and next 4 ingredients in a large bowl, stirring with a whisk. Stir in raisins and walnuts; make a well in center of mixture. Combine oil, vanilla, and eggs in a medium bowl, stirring with a whisk. Stir in soy milk; add to rice flour mixture, stirring just until moist. Spoon batter evenly into prepared muffin cups. Sprinkle batter evenly with streusel topping.
5. Bake at 400° for 20 minutes or until muffins are lightly browned and spring back when touched lightly in center. Cool in pans 5 minutes on a wire rack. Serve warm. Yield: 18 servings (serving size: 1 muffin).

Our Thoughts …

The first thing that caught my eye when reading through this cookbook was the pictures. They are great pictures for some of the recipes (not all of them). The recipes start of with a Baby and a Toddler chapters. The next chapters are geared towards family meals … Poultry and Pasta, Meaty Menus, Favorite Fish, and Yummy Veggies. This cookbook really has something for everyone within those chapters!

Some of our favorites as we read through are the Sweet and Sour Meatballs and the Pumpkin gnocchi with lemon-sage butter sauce. I will say that these recipes are the five ingredient type nor are they the super fast type (some look faster than others.) I know we hope to try a few out in the coming months. I am in particular looking forward to some of the  Yummy Veggies recipes for our Meatless Monday posts!

My Thoughts …

We love to watch Guy’s shows here at our house. He is a lot of fun to watch and not the same old boring cooking or food show. So when I heard Guy was coming out with his first cookbook, I knew we had to make room on our cookbook bookcase (yes, they have their own bookcase) for his book. Looking at the cover of the book, I knew the book was really part of Guy. The cover just screams his personality! That theme continues through the book. The cookbook does contain many great recipes but it also has many great stories from Guy. This makes it a great read and not just a reference book to sit on your cookbook bookcase! ;)

I am excited to share a recipe from Guy Fieri Food. Here is Guy’s Watermelon Pork Tacos!

Watermelon Pork Tacos

Pork
1 pork tenderloin, silverskin removed, cut into 1-inch-thick slices
1 tablespoon onion powder
1 teaspoon red chili flakes
1 teaspoon freshly ground black pepper
2 tablespoons chopped ginger
1 tablespoon seeded, minced serrano chile
2 tablespoons minced garlic
3 tablespoons soy sauce
2 tablespoons oyster sauce
1/2 teaspoon sesame oil

Salsa
1 cup watermelon cut into 1/4-inch cubes
1 cup seeded English cucumber cut into 1/4-inch cubes
1 Haas avocado, pitted, peeled, and cut into 1/4-inch cubes

Lettuce “Shells”
1 romaine lettuce head

1. To make the pork, combine all the ingredients in a resealable 1-gallon plastic bag and marinate for 30 minutes.
2. While the pork is marinating, whisk together all the ingredients for the vinaigrette. In a medium bowl, combine all the ingredients for the salsa. Very gently fold in the vinaigrette. Chill.
3. Trim off the soft dark green end of the romaine. Cut off the root end and separate the leaves to create 4-inch-long lettuce “shells”. Rinse, dry, and chill the leaves.
4. Preheat a grill to medium. Discard the marinade. Grill the pork for 3 minutes on each side. Remove from the heat, let rest 3 minutes, and roughly chop into 1/2-inch pieces.
5. Fill the lettuce shells with the pork, top with the salsa, and devour!

If that doesn’t sound yummy to to then, I am not sure what would. I honestly can’t wait to add this our menu next month. We will have to leave out the oyster sauce as I am allergic to oysters but I think it will still taste great.
