Walmart Steak Grill-Off! #steakover

We hosted an exciting family  mini grill-off while trying the new Walmart USDA Choice Premium Beef steaks earlier this week. In my family, steaks are marinated. Mom often uses a store bought marinated and dad  is the grill master. Here at our house, Brian is all about the rubs.

So we decided to test the kids and see what they thought of marinated versus rub steaks.

I went with the Lawry’s Steak and Chop marinade for my steaks. My steaks soaked up the marinade for a couple of hours. Brian made a Merken Rub for his steaks. Brian just needed a few minutes to put the rub on his steaks before they went on the grill.

I pulled out the cheese labels and labeled the steaks for the taste test. Sophie was cute and asked me if I had the rest of the alphabet. The kids are used to just eating what is prepared for dinner so the concept of picking a favorite was a bit confusing for them. They wanted to know who’s steak was who’s before the picked but we finally got answers out of them before we shared.

The winner was steak B … Brian’s Merken Rub steaks. Matthew quickly changed his mind when he realized he picked daddy’s steak over mommy’s. Hey, I take what I can get!

Did Summer Come?

Yesterday the high was in the 80s here. We had SNOW just a few weeks ago! I had a chance to share this picture on Instagram with Brian so he could see the kids having fun.  He sure is missing them when he is in Chile!

Brian’s response to this picture was … they look so happy! They were! It was warm … they were outside … they were in heaven!

Grandma (my mom) brought bubbles with her … well they are bubble machines. We soon realized they require batteries. LOL  So there mom and I were trying to get batteries in the bubble machines while the kids jumped around.  Tip: Check to see if the new toy requires batteries before you show the kids. We know this tip. We knew better. oh well.

The kids ran around the yard chasing the bubbles. There was a nice breeze carrying them down the hill to the backyard. It was beautiful full of bubbles. Then they became kids again and started chasing each other with the bubble machines. They started making laps around the house chasing each other. On one hand you want to tell them to be careful but on the other hand I was thinking about how they would pass out for bed!

Today is supposed to be just as warm as yesterday and then we get Spring back again. We are making sure to enjoy this nice weather while it is here. The taste of summer is being enjoyed for sure!

I think tonight maybe we will have dinner outside … or at least ice cream after dinner.

Wishin’ For Summer Sunday Dinner

Last week when we had 10 inches of snow on the ground, I dreamed up this Sunday’s dinner. Then I named it. I have no idea why I named the dinner as we don’t generally name our dinners but I told Brian it was the “Wishin’ for Summer” dinner. Today is was 63 degrees outside at dinner time. That was a nice taste of warmer weather for sure to go with this Sunday dinner. The menu was pork ribs, baked beans, and potato salad. Not in this picture were the creamsicle cookies the girls picked but they fit the summer theme too!

Brian mixed up a rub for these ribs and used a sauce from the Metro Cooking Show media bag. They were so good the kids were asking for seconds. I admit that baked beans were Bush’s Original Baked Beans straight from the can. Brian has a hard time not doctoring them up but I won the battle today and they were straight from the can. yum! The potato salad is the Robert Ivrine’s potato salad recipe from one of his Dinner: Impossible shows! Brian loves this potato salad recipe and honestly only makes a few minor tweaks to the recipe. I have to say that I am a fan of this recipe too since it isn’t a heavy creamy potato salad! 

One of these days, I will catch up and get the March Meal Plan posted … it is almost done. Brian being sick has made our meal planning an interesting experience this month. I do have to say that we were all happy he was in the kitchen cooking today. I know he loved being back in there even if he did over do it a bit much today. Hopefully we will be back in our routines here at Simply Budgeted, his posts over at This Cookin’ Dad, and maybe even catch up on cleaning the house at some point soon. Until then … I will think about the rib sandwiches that are the menu for  Tuesday’s dinner.

Our Summer Camping Trip

I have mentioned a few times that we went camping earlier this month. We stayed two nights at Jellystone Park Yogi Bear’s Natural Bridge, Virginia location. As I said, we went in camping in that it was at a campground. We opted for a cabin which was a really smart move even it was an upgrade from the Groupon I had bought for the trip.

The cabin next to us was a Large Deluxe Cabin and also had a family of five in it. We decided the extra space they had would probably worth the extra price in the future!

We did have a lot of fun making S’mores at our campfire. Plus the kids really loved the two playgrounds (this was just one of them!)

Their favorite part was probably the Spray Playground though …

Little Dude loved the Jumping Pillows! I got on them once and was convince I was going to break a leg and promptly go off. (Note, I saw no one get hurt on these while we were there!) Of course the one picture I have of the jumping pillow, he isn’t on them but he is in the picture!

I failed to take pictures of the pool, the two huge water slides (that Grace actually went down!!), the mini-golf, the beach, and the James River though! The kids kept us busy and my phone tucked away apparently! We should have checked out http://www.splashabout.com/ before we left so we could have had an easier time with three kids in the pool!

When you check-in you are given a full schedule of what is happening. The girls really loved the craft times (they are either free or really cheap). Brian and I loved that all of these activities were included in our cabin rental. We weren’t shelling out extra money at every turn! This was even more perfect for our family of five because the stay included arm bands for two adults and three children!

The campground has the option to rent a golf cart. We decided to try to  just use the van for driving around and it worked out nicely. The speed limit on the driveways is really low because of the golf carts so keep that in mind as you drive around!

There are Jellystone Parks all over the place so you check around you and see if there is one near you! You can follow the Yogi Bear’s Natural Bridge Campgrounds on Twitter and Facebook where they update their activities and specials too!

Our Perfect Outdoor Summer Sendoff Party

But first here is our backyard and why we were so excited to browse the Kmart Outdoor Living Catalog …

See! We need some help out there. Two years ago, Beth and I put in that patio and the steps … by hand. We haven’t gotten around to adding any furniture back there though besides the little kids table that was a gift to the kids from grandparents. Oh and just ignore the weeds, there are not enough motivation anywhere to convince us to get out there when it is 100 degrees every day around here lately!

So this set would be a dream set for us because it room for more than two adults. We could have a nice little gathering out back before we send the kids off to school. Maybe you caught all of the hoses in that picture our patio. Over to the side of the steps, we set-up “water fun” as the kids call it. They love to play in the sprinklers, little pool, and slip ‘n slide! A “water fun” party would be a hit not only for our kids but some neighbor kids and church friends too!

 As we kept looking through the catalog, Beth found the outdoor lighting pages and noted her sister would spend hours looking at that page alone. She loves to dream about how to use outdoor lighting!

But I could spend hours on the outdoor grilling pages and trying to determine what grill would work not only for a family dinner but a outdoor summer sendoff party. Matthew would pick hot dogs for the send off meal as that is one of his favorite meals. We might pick grilled chicken, grill corn, and sliced watermelon for the menu though. That still leaves the question of how big a grill do we need versus how big of a grill I want!

Since the garden leads right onto the patio, we found many items that would be great to add to that side garden area too. I think the birdbath is my favorite (I have a thing for birth baths) but Beth really loves that turtle! Maybe it is because she wouldn’t have to feed it or watch it or do anything with it!

If we continue to dream about our backyard, it is that last picture where our backyard opens into a field. We have spent the last few years taking down a fence that was back there. The kids have an awesome playground back there right now but we call that spot our future pool spot. When we saw this picture in the catalog it sums up part of our dream for the area between the current fence and the playground area. It will be a retreat area where we can enjoy our yard  … don’t you want to go sit here with us?!

Now we are thinking about how to get a few new patio options to host this outdoor summer sendoff party with lots of “water fun” and grilling! Would you come?

    Meatless Monday: Corn Pancakes with Sauteed Veggies

    We’ve been kind of slacking this summer with our Meatless Monday entries.  We’ve been trying a few new things around here to see how they work.  We’ve also been taking the time to pay attention to the web and to magazines that we subscribe to so that we can get a little bit of inspiration and have some great ideas for all of you out there.  I’ve also started to realize that I don’t really work in terms of recipes.  I always try to force a recipe out of myself, but I tend to work in handfuls, pinches, and abouts, rather than in cups, teaspoons, and exact measurements.  I’m hoping that, as I start writing down my methods, those of you who are a little more reserved in the kitchen can see just how much fun and how extemporaneous cooking can be.  Really, if you get good ingredients that go well together, you can pretty much just cook it until it tastes right.  If it doesn’t work….well, pizza fixes pretty much anything!

    This week’s meal starts with Fresh Corn Cakes from Cooking Light.  I saw these as I read through the magazine and knew that we would be trying them at some point.  As it happens, we already had almost everything we needed to make this recipe.  We did not have green onions, so we just omitted them.  The corn was left over from earlier in the week and had been roasted on the grill, so that was already flavored pretty well.  We also had some flavored butter handy (just melted butter with garlic and onion powder, salt, pepper, and Italian seasoning), so we used that on the pay, instead of the oil.  We were also in a bit of a hurry and hate to clean extra dishes, so we just dumped all of the ingredients into the food processor and gave it a spin.  Ours didn’t rise up quite as nice, but I’ll bet they were just as tasty!

    For the veggies, I just took stuff that we had handy.  A little oil in a large skillet over medium-high heat.  Add in some a chopped onion, a big box of chopped mushrooms (maybe 4 cups), salt, and pepper and cook, stirring occasionally until you just start to get some brown on it.  Top it with 4 or 5 big handfuls of baby spinach.  This will seem like WAY too much, but trust me, it’ll cook down.  Don’t touch it for about 3 minutes.  The steam from the onions and mushrooms will do the work here.  Start mixing in the spinach gently.  Tongs are a great way to go here.  Once everything looks just about done, toss in 4 or 5 chopped tomatoes.  I chopped these in pretty good sized chunks, but then, I thought about adding them at the last minute.  It was a great add!  Add a bit more salt and pepper to help the tomatoes break down and to flavor the dish.  Give it maybe 5 minutes or so and you should be all set.  Spoon some on top of the corn cakes and enjoy!

    My Thoughts:  The whole dish was reminiscent of a Shrimp and Grits dish, without the Shrimp.  The corn cakes really did taste a lot like really yummy grits but with a texture that did not make the dish all mushy.  Surprisingly, for as much spinach as I used, the spinach flavor really did not stand out.  As a good Southern boy, I know that I am supposed to love cooked greens, but I have just never really developed a taste for them.  I know I should eat them, so I try to incorporate them where I can.  In this case, the flavors of the tomatoes, mushrooms, and corn really mellowed out the bitterness of the greens.  I was very happy with that!  This is a dish that I would definitely do again!

    My Thoughts …

    I bought these for Girl Scout camp. I hate spraying the kids with bug spray so I thought these would be great. Then we had a super cool and not buggy camp week (YAY!) Since then the heat has arrived and so have the bugs. I have used these on the kids when we are out in the yard for awhile several times. On the 4th of July when Brian set off the small package of fireworks, I actually just set these on the deck rail as the kids and I stood there watching. I will say the sticky doesn’t seem to hold them enough for my crazy active kids so I have use double sided tape and that works pretty good. Brian also suggested putting them on the kids’ backs instead of the front of their shirts (like church nursery, daycare, etc.!) These work for 72 hours so if you keep them in a baggie you can put them back on the next day which makes them reasonable for your budget!

    Abbey’s Hope: Safer Pools. Safer Kids.

    We are honored to feature a reminder of pool safety thanks to details provided to us by Abbey’s Hope Foundation. Summer time is here and kids all over are jumping into pools on the super hot summer days. But as you read this, we are reminded that not all children jump back out of those pools. It is a sad fact that we often over look water safety as our kids out even if we know that we shouldn’t.     It won’t happen to us … or can it?

    Most people are surprised to hear that drowning is second only to car crashes as the leading cause of unintentional death and injury among children ages 1 to 14 years old. Each year approximately 830 children die as a result of unintentional drowning. That is nearly 3 child deaths each and every day of the year. Injury numbers are no better. Each year approximately 3,600 non-fatal injuries occur to children 14 years old and under due to near-drowning incidents. Home swimming pools and spas are the most common site for drowning. Open bodies of water like lakes, rivers and streams are where most of the other drowning happens.

    Mission of Abbey’s Hope …

    Summer Outdoor Fun

    As summer is coming, we are trying to dream up activities for our kids to keep them busy. Whitney over at It’s Gravy, Baby recently posted about their homemade water table and water wall. I love that the water wall is made out of recycled materials and pallets. Seeing that there are still a few pallets in our back yard from last Spring’s landscaping efforts, this would be an easy project for us to create. If we don’t have everything we need, we might need to watch for a PVC Fittings Sale to make this project happen for the kids.

    We are learning to think outside of the toy section to create activities for the kids. The recent edition of Family Fun magazine had some great activities with pool noodles that we were able to recreate (more to come on that!). All of this makes we wonder what we could great from some random items in the Commercial Industrial Supply section. Maybe with the commercial quality of the parts and pieces, they would hold up better than the cheap plastic toys that we seem to replace every year!

    Now I am trying to think of what else we could create. A marble race track? A PVC frame with holes to create dripping water for the kids to run through in their  bathing suits? An obstacle course of some sort with some old tires? I am sure there a lot of random ideas out there. Beth might have yet another excuse to use Pinterest to come with some great summer fun ideas for our family.

    On the Move with Kids

    Are you trying to get active this Spring and Summer? We love to be outside doing various activities but the struggle often is how to include our kids in the activities.

    Brian has picked up running again so a Jogging Stroller would actually be a great piece of workout gear for him. I don’t know how willing he would be to push 40 – 80 pounds of kid weight up the hills in our neighborhood though but it would be an awesome addition to his workout. Brian has also talked about getting a bike again soon. It has been awhile since he has had a bike … even longer since I had a bike! The girls are getting good at riding on their bikes but it will still be awhile before Matthew can do a bike trip. A solution that worked for jogging and biking would perfect for our limited garage space!

    The Zigo Mango is not only a stroller, or just a jogging stroller, but also a kids bike trailer! This stroller is ready right out-of-the-box! You will save money but not buying add-ons! The Zigo Mango Stroller accommodates 1 or 2 children (with a second harness). That harness is a 5 point safety harness that will keep your kids in the padded seats while riding on the 4 point shock absorbers! One of most appealing features to Brian and I would be multi-position adjustable pushbar! We have found that a stroller works for one of us but not both of since I am so much shorter than he is! It would great to have a stroller that was comfortable for both of us to use.
