Walmart Steak Grill-Off! #steakover

We hosted an exciting family  mini grill-off while trying the new Walmart USDA Choice Premium Beef steaks earlier this week. In my family, steaks are marinated. Mom often uses a store bought marinated and dad  is the grill master. Here at our house, Brian is all about the rubs.

So we decided to test the kids and see what they thought of marinated versus rub steaks.

I went with the Lawry’s Steak and Chop marinade for my steaks. My steaks soaked up the marinade for a couple of hours. Brian made a Merken Rub for his steaks. Brian just needed a few minutes to put the rub on his steaks before they went on the grill.

I pulled out the cheese labels and labeled the steaks for the taste test. Sophie was cute and asked me if I had the rest of the alphabet. The kids are used to just eating what is prepared for dinner so the concept of picking a favorite was a bit confusing for them. They wanted to know who’s steak was who’s before the picked but we finally got answers out of them before we shared.

The winner was steak B … Brian’s Merken Rub steaks. Matthew quickly changed his mind when he realized he picked daddy’s steak over mommy’s. Hey, I take what I can get!

Are Chinese Tea Eggs a New Easter Twist?

Here is the tea display at our local Walmart. It honestly quite small and was really low on stock the day I went to shop. I was  hoping to try another new variety of tea that day but the selection was really limited. I did buy the Bigelow Tea Constant Comment and Assorted Herb Tea boxes though!

Tea SelectionWe decided to try the Pomegranate Pizzazz and Orange & Spice Herb Tea varieties for the Chinese Tea Eggs. These teas are beautiful colors when you brew a cup of them. I really love the Pomegranate Pizzazz Herb Tea by Bigelow Tea as it has a nice fresh fruity taste to it!

If you check out the Google + Album you can see the full process for the Chinese Tea Eggs. You boil the eggs to get hard boiled eggs and cool them. Here is the part that seems wrong, you crack the eggs but don’t take the shells off! Then you put the eggs in water with the tea bags and bring the water to a boil. Once the water is boiling, turn it down to a low simmer. We simmered the eggs for an hour before we cooled them and then peeled them. We learned a few lessons that we will share. First, you need to crack the heck out the eggs. We didn’t crack them as much as we should have … as I said, it just seemed so wrong! We also realized we should have added more tea bags for more color on the eggs. And finally, we think we should have simmered the eggs longer.

I don’t know we are ready to replace our Easter eggs with Chinese Tea Eggs but I love the idea of using natural Bigelow Teas to dye eggs so we will keep working towards perfecting this!

Some times you just need a cup of tea. As part of this shop, I was excited to learn more about Bigelow Tea’s Constant Comment blended tea. This is a unique hand blended tea at Bigelow Tea. I love the orange flavor to this tea. It is a new favorite for me for sure!

Check out that tea bag. What do you notice? I notice no staples!!! I love to compost my tea bags as it adds a nice balance to the compost bin but so many tea bags have staples in them. Tiramisu Lightened up for Valentine’s Day

Happy Valentine’s Day!!  Can I just tell you that it has been a very long Beth Week.  Our 10th wedding anniversary was on Sunday, Beth turned 24 again on Tuesday, and today is Valentine’s Day.  After a week of planning surprises and special stuff for my sweetie, I am just a wreck!  Still, I didn’t want to just phone it in for Valentine’s Day.  Thankfully, International Delight Light Iced Coffee was here to help me make a velvety, luscious tiramisu for my darling while saving me a little extra effort.  Together, we not only lightened up the effort; we lightened up the whole dessert!

Just because we are watching what we are eating doesn’t mean that we can’t enjoy a little treat from time to time.  Still, we do have to watch what we are putting into it our desserts.  The International Delight Light Iced Coffee help me to make a pretty quick take on tiramisu with a little bit of calorie savings as well.  On top of that, if you are a regular reader, you know that Beth is not overly fond of coffee of any sort.  So, while the texture of tiramisu may be something that she can get into, the flavor, even the smell, has always turned her away from it.  With that in mind, I picked the Mocha flavor and integrated that into the marscapone cheese so that we got barely a hint of the coffee, just enough to enhance the chocolate throughout the rest of the dish.

And yes, there is plenty of chocolate.  In addition to the mocha in with the marscapone, I added a fair amount of cocoa powder and then whisked it until it was light and fluffy.  I also made a double strength hot chocolate, sweetened with a little powdered sugar.  I drizzled that over cubes of pound cake (not lady fingers, I know, but trust me, you won’t put this down!).  I topped the drizzled pound cake with marscapone mixture and grated some dark chocolate right on top.  Beth could hardly taste the coffee flavor and definitely was not turning down a second bite!  For me, I was in heaven with a great big serving of the tiramisu and a glass of the International Delight Light Iced Coffee over ice.  YUM!!

Individual Mocha Tiramisu

Ingredients

1 cup milk
9 Tbsp cocoa powder, divided
3 Tbsp powdered sugar
8 oz marscapone cheese
1/2 cup Mocha Flavored International Delight Light Iced Coffee
1 lb frozen pound cake, cut into 1/2 inch cubes
dark chocolate squares for grating 

Directions

Heat milk over medium heat.  Add 6 Tbsp cocoa powder and whisk until completely combined.  Turn off heat and allow to cool completely.  Once cool, stir in powdered sugar until completely dissolved.  Pour into a container and refrigerate until ready to use.

In a large mixing bowl, combine marscapone, coffee drink, and 3 Tbsp cocoa powder.  Whisk until thoroughly combined and continue whisking until the mixture begins to thicken, resembling a thick whipped cream.  Scoop into a container and refrigerate until ready to use.

To assemble:  Add pound cake cubes to an individual serving bowl or glass.  Drizzle chocolate mixture over the pound cake.  Top with marscapone mixture.  Grate dark chocolate over the top.  Dig in and enjoy!

A Healthy Start to Your Day with Jennie-O Champion for Kids

We recently headed off to Walmart in search of  Jennie-O bacon and sausage. Jennie-O turkey bacon and sausage are a great  low-fat protein that is perfect for a family breakfast! It was a hard hunt but we finally found the Jennie-O turkey sausage in one of the open refrigerated cases at our local Walmart. I do wonder why it wasn’t with the other sausage which is where I looked first.

The thought of cutting into the packaging of the Jennie-O Turkey Sausage had me so excited that I did cut into it before snapping this picture! The raw turkey sausage is a lighter color than traditional sausage, as expected. It has the same color as ground turkey if that is a helpful reference! #JennieO4kids

We decided to host a family breakfast because this one of the many ways we teach our kids about healthy eating and making good food choices. Our kids LOVE family breakfast time. We try to have at least one family breakfast during the weekends. The kids get all excited when they learn that we are having a big breakfast together. We do eat dinner together almost every night but to have breakfast together is a big treat for them. The problem with a big breakfast and little kids is that you have cook the breakfast which means they have to WAIT. But Brian found some coloring place mats during the holiday season and I set those up for the kids to color. It gave them an opportunity to be near the kitchen and kept them busy instead of asking if the food was ready yet! Those are some happy coloring faces!

When we started putting the food out the table, the kids were all excited. They each went for their favorite first. Grace went for the fruit, Sophie has the turkey sausage on her plate, and Matthew is all about the eggs. They did pile on more food but we love to let them pick what they want. When we have a healthy, well balanced meal on the table, we don’t have to worry about them making the wrong choices in what they eat. They have all learned to love healthy foods through this simple method!

Our breakfast included over easy eggs (plus Matthew’s scrambled eggs), sweet potato hash, Jennie-O Turkey Sausage, and fresh fruit. That is a healthy breakfast that can not only keep me going but can keep the kids going and focused as they go through out their day! Now that we know where the Jennie-O Turkey Sausage is located at the store, we will be buying it more often to add to our healthy family breakfasts!

Huggies Pull-Ups Training Pants #HuggiesWalmart

Is your child potty training?  How much of your life does it seem like it consumes?  For me it feels like, if I’m not helping them go to the bathroom, I’m cleaning up from when they didn’t make it!  And I’m always buying packages of Huggies Pull-Ups.  The trouble is that there is no one approach.  Every child is so different when it comes to this.

Grace was the laziest kid to train.  She was just as content as could be to be wet!  Even when she could finally make it through the day, she’d pee the instant you put her in a nighttime diaper!  We used to have to wake her up at 10 pm every night so that she could go to the bathroom and not have an accident at night.  This went on for months!

Sophie was so easy!  She actually slept the night without accidents before Grace did.  And no, not in age, but really before Grace!  The biggest issue Sophie had was night terrors.  It took a couple of times before we realized that needing to pee actually triggered them for her.  Once we got her to pee, she would calm down and be back asleep within 3 minutes.  Have you ever gone through that?  As a parent, you will be freaked out of your mind the first time it happens!

Matthew (of course it’s the boy) has been potty training for a long time now!  He has these great successes and then reverts back.  At first he didn’t care, but now when he reverts back, he gets frustrated and down on himself and then just gets more frustrated.  He is a case where the Huggies Pull-Ups have really helped.  We actually started sending him to school in them because he was having so many accidents that his confidence was taking such a hit that he was having trouble even wanting to be at preschool.  It’s hard enough to adjust to a new place, but having accidents just makes it worse.

This past week, we were running low on our stash of Huggies Pull-Ups, so I had to head out with three kids who were off from school to get some more.  Fun…..

Why does it seem like kids only want to take naps when they don’t have the option to?  Matthew was almost completely asleep when we pulled into the parking lot!  This boy never takes a nap!!  He dragged through the entire store and really hung in there for me.  When we got home, he was out and transferred to our bed.  That boy was TIRED!

Apparently these were on a “Rollback” special.  Is that what the red dot means?  I don’t know; I didn’t see any signage.  At the end of the day, though, they are cheaper here than anywhere else and we were out.  In the buggy they go!

Along with the diapers, we got so new underwear for Matthew to start wearing.  His old ones are starting to get tight and he got to pick them out.  Feeling special and grown up is all part of the process, right?  We also got him some treats for when he does the right thing.  He loves Starburst candy just like his daddy.  I just hope he doesn’t take the orange ones!  While we were there we picked up a couple of Christmas presents for my grandmother, some dessert for Christmas dinner, and a snack for daddy!

Our Elf on the Shelf, Kingston, helped us out a little bit.  They actually had a little trouble finding him that day.  Hopefully, this hiding place will not be an option next year!

You already saw that we got Starburst candy for Matthew reward.  We put them all in a candy jar on my side of the bed.  Somehow the girls always con candy out of me when he gets his treat.  What did they do that was so special?

Great Value Holiday Party Treats

December means lots and lots of holiday parties.  Whether you celebrate Christmas, Hanukkah, any number of other winter holidays, or even December birthdays, providing treats for all of the celebrations can strain your budget in a month when presents alone can empty your wallet.

Thankfully, you have help!  Great Value refrigerated dough is here to the rescue once again.  You might remember us posting about some Great Value Thanksgiving goodies, but here are a couple of easy options for the holiday season that you could use in addition to the ones we’ve shown you before.

 

Great Value Cinnamon Roll “Cake”

In our house, we celebrate Christmas, or Jesus’ birthday.  Therefore, we celebrate with “Happy Birthday, Jesus!” signs and birthday cake.  This year, we decided to try out making a breakfast birthday cake out of Great Value refrigerated cinnamon rolls.  Really, this couldn’t be a simpler way to celebrate.  The center is lovingly gooey and poking holes into the “cake” lets the icing flow throughout the entire thing.  Cutting it into wedges means that the pieces separate in the greatest way as you eat it.  YUM!!

Ingredients

2 cans Great Value refrigerated cinnamon rolls
Really…that’s all!!

Directions

Grease a 9-inch round cake pan.  Place the rolls from one can around the edge.  You’ll fit about 7 around the edge and one in the middle.   Keep them pretty close, but not touching.  Place the rolls from the next can on top of the first set of rolls.  Place them where the bottom rolls meet and slightly closer to the center.  This will give the “cake” a little structure.

Bake according to package directions.

When you pull the rolls out of the oven, flip over onto a plate and then flip back over so that the top is face up.  Use a skewer to poke holes all throughout the “cake”.  Pour both icing containers over the top and spread evenly.  Cut into wedges and serve!

 

Great Value Frosted Cookie Bites

Sophie’s birthday is in December and, with all of the parties that she has (friends, grandparents, preschool, etc.), it’s nice to have something besides birthday cake for her party.  These little snacks are great two-bite treats that are sweet, chocolaty  and just cute as can be.  Oh, and most importantly, they are cheap and ohhhh so easy!  Enjoy!

Ingredients

1 package Great Value refrigerated chocolate chip cookie dough
1 package frosting (I used a package of Duff Goldman Red Icing that I got at the Mixed Conference)

Directions

Cut the log into 24 approximately equal pieces (roughly one-inch slices cut in half).  Spray mini-muffin pan(s) with cooking spray.  Roll the pieces into little balls and place into pans.

Bake according to package directions.

Let cool for a few minutes before removing to a cooling rack.  Allow to cool completely before decorating.  Enjoy!!

New Del Monte Fruit Cups for Wintertime Lunches #SmartSnack

The kids and I headed to Walmart over the weekend to get a few items since Brian was at the Mixed Conference. I wasn’t doing the full shopping list for the week of meals but we needed items for lunches and to finish our Angel Tree shopping. Grace was in charge of the list, can you tell?

Grace kept asking when she could have a Del Monte fruit cup in her lunch. She loves finding them in her lunch! We bought two of the Diced Pears with Vanilla & Spice because Grace told me getting one of them would not be enough. I won’t turn down the kids asking for fruit!

I am hoping to sneak at least one of the new Diced Apples & Pears with Caramel Flavor this week for my lunch!

As a big surprise, the kids saw Santa at Walmart! This is the edited picture … no one was crying!!

The new Del Monte Fruit Cups are making my lunch packing task easier this week. I don’t have pictures of the kids eating these but I can tell you that the lunch boxes came home empty today. What is your favorite winter fruit for lunches? Leave me a comment and let me know! Matthew went running to the Angle Tree that is in our Walmart on the way out of the store. Great Value Goodies for the Thanksgiving Holiday

Thanksgiving holiday meals can get expensive pretty quickly if you aren’t careful.  The dinner itself needs lots of attention, but, if you are hosting family, you’ll want something for breakfast too.  Who wants to spend time making breakfast for a crowd when you know that you’ll just be spending the whole day making dinner?  Thankfully there are products out there to help!  Walmart’s Great Value refrigerated crescent rolls, biscuits, and pie crusts are some great shortcuts for making delicious dishes.

Before posting recipes for our readers, I always like to make sure that I try them out first.  In this case, I had a couple of events coming up that were perfect opportunities.  First, I had a Thursday evening Bible study that needed snacks.  Mini Pecan Pies fit that bill perfectly.  On Friday morning, I had a breakfast with a few guys from the church.  We meet every two weeks or so for breakfast and we all contribute a little something.  This time, I contributed Easy Monkey Bread and Breakfast Pigs in a Blanket.

Here are the recipes and some pictures of the prep.

Mini Pecan Pies

This recipe comes from my Great-Grandmother’s Pecan Pie recipe.  I love it, but so few people that I cook for really eat pecan pie.  In Louisiana, you had to make two pies just to barely meet demand.  You might not get all that you want, but everyone would get some.  In Central Virginia, we won’t even finish one.  I don’t know, maybe it’s just too gooey.  I’ve taken that yummy classic recipe and I reduced it down into a tasty two-bite treat.  The result is crunchy pecans floating in a slightly gooey and oh so sweet filling all wrapped up in crusty pie shell.  So delicious!

Ingredients

1 package of Great Value pie shells (you’ll use both shells)
2 cups chopped pecans
1 cup Karo dark corn syrup
3 eggs, slightly beaten
1 cup white sugar
2 Tbsp butter
1 tsp vanilla
1/8 tsp salt

Directions

Preheat oven to 350.

Using a 2 1/2 inch ring, cut the pie shells into small discs (I got 40 rounds by keeping them close and rerolling the crust).  Push the discs into mini muffin tins and fill with approximately 1 Tbsp of pecans per shell.

Combine remaining ingredients into a mixing bowl and stir until well combined and bubbly.  Carefully pour syrup mixture into pie shells so that pecans are mostly covered.  Careful not to overflow the pie shells.

Bake at 350 for 30-35 minutes or until filling has set (they will appear bubbly and inflated, but will settle as they cool).  This part just takes practice.  Either way they taste good…all the more reason to practice often!  Allow to cool in pan for about 5 minutes before attempting to remove.  Use a butter knife to turn around the edges until the pies release.  Let cool completely on a wire rack.

Serve with whipped cream and enjoy!

 

Breakfast Pigs in a Blanket

These are super easy and are all the better as a breakfast helper because they can be rolled out the night before and just tossed in the oven in the morning.  The maple sausage really makes this tasty without all of the morning mess of syrup.  If you do make ahead, make sure that you cover them with a towel before putting them in the fridge for the night.

Ingredients

2 cans of Great Value crescent rolls
16 pre-cooked maple flavored link sausages

Directions

Preheat oven to 350.

Roll sausages into individual crescent rolls.  Bake for 12-15 minutes or until lightly browned.  Serve and enjoy!

 

Easy Make Ahead Monkey Bread

This was quite a leap of faith.  I wasn’t sure how the biscuits would work sitting overnight.  Let me tell you, these worked out way better than I could have imagined.  I wound up with this great extra cinnamon syrup that really helped keep the whole thing super moist.

Ingredients

2 cans Great Value jumbo biscuits
3/4 cup white sugar
2 tsp cinnamon
1 cup brown sugar
3/4 cup butter, melted

Directions

Cut each of the biscuits into 4 pieces.  Toss into a gallon-sized zip top bag with the white sugar and cinnamon until each of the biscuit pieces are well coated.  Seal the bag and place in the fridge overnight.

The next morning:

Preheat the oven to 350.

Pour all of the biscuits into a 12-cup tube or bundt pan.  Combine brown sugar and butter and pour evenly over the biscuits.  Bake for about 30 minutes or until all of the biscuits are cooked through.  The syrup should be goopy, but the biscuits should not be.

Allow to cool for just a few minutes before putting a plate on top of the pan and carefully inverting.  Tap the pan a few times until it drops onto the plate.

Disney Princess Augmented Reality App #DisneyPrincessWMT

We had the opportunity to use the Disney Princess Augmented Reality App when we attended the Disney Retailtainment Event!  #DisneyPrincessWMT

When I opened the app, it showed me that we needed to find three trigger points to unlock all of the outfits in the Augmented Reality App!

 

The pink outfit trigger point was the Cinderella Trigger point. This was my favorite Trigger point because when Grace saw this display she RAN to it. She fell in love with that pink dress. It was her dress by the pink version of it. I admit that I too love the pink dress. What do you think about the pink Cinderella dress?

I admit that the Fairy Godmother was all over but it wasn’t the right one and by the time we found her, the girls didn’t care about the Disney Princess Augmented Reality App on my phone. It had completely lost their interest by then. But here is the display that had the right Fairy Godmother on it!

The Fairy Godmother unlocked the last outfit and it was the classic blue Cinderella outfit! We had all of the outfits … OK, I had them all. The girls were dreaming about the Barbie doll sized Cinderella carriage with a horse toy they had found at the at point.

Before I knew it, the app was telling me to dance. I had no idea how I got to this screen or how to get past it so I just followed the instructions and danced. My sister who was shopping with us decided I was insane even when I show her what I was doing. If I still had Grace’s attention at this point, she would have loved this part of the app!

My favorite feature of the app was when it told me to show the Cinderella DVD + Blu-Ray cover and the 3D carriage appeared over the cover! Even my sister was impressed with this but once again the girls were still stuck on that Cinderella carriage and horse toy!

Disney Princess Cinderella Retailtainment #DisneyPrincessWMT

The girls and I were very excited to attend a Disney Princess Retailtainment event two weekends ago. We even got my sister to come along and dropped little man off with my brother so it was an all girl event! Did you know that some Walmarts host these Retailtainment events? #DisneyPrincessWMT We learned quickly that if kids are dressed up and walking around Walmart that every single person in Walmart will stop to talk to you about your kids. oh my lands! The girls thought the attention was great and laughed for five minutes straight when they heard someone call them twins (They are 15.5 months apart in age so not twins unless you want to claim them as Cinderella twins!)

The event wasn’t quite what we expected the trip was a lot of fun thanks to the Disney Princess Augmented Reality App that I download days before the trip. You go to the Apple and Android version of this app to download your self! This app is like the Avengers App where you go around the store to find trigger points to unlock features of the app. Here were the three check points we had to find.

The trigger points are different signs around the store. This display had the Cinderella trigger point. When Grace saw this display, she ran to it. She ran so fast she ended up in my pictures of the display to show the trigger point. Did you know Cinderella has a pink dress? This trigger point unlocked her pink dress!

We really after the new version of Cinderella that was just released on Blu-Ray and is sold in a DVD + Blu-Ray combo package! Can you tell Sophie is happy?!

The girls added to their Christmas list when they decided they must have the Cinderella carriage and horse made for a Barbie doll sized Cinderella!

The Retailtainment event was a small cart that had Cinderella cake. The girls also received activity sheets and a pumpkin decorating sheet. The host for the event loved the girls outfits and gave them two of the items from the top of the cake … the Cinderella and the carriage! (They are happily displayed in their room right now!)
